Pineapple Pancake Brunch Stack Recipe

Ingredients
- King of Fruit fresh pineapple (half)
- 20gm butter
- 1Tbspn brown sugar
- pancake mixture of your choice
- fresh blueberries
- macadamias, broken into pieces
- Greek yoghurt
Method
i. Cut half a King of Fruit fresh Australian pineapple into slices, then pieces, and sprinkle with brown sugar.
ii. Melt butter in a non-stick frying pan over medium heat until it starts to bubble then add pineapple pieces and cook until caramelised to your liking, a couple of minutes per side. Set aside in a bowl, retaining juices in the pan.
iii. Make pancakes of your choice.
iv. In pan with the retained buttery pineapple juices, add 2 Tbspns maple syrup and warm over low heat, stirring until it comes together into a sauce.
v. To serve, stack pancakes, top with a generous amount of caramelised pineapple pieces, some fresh blueberries and macadamia pieces.
vi. Top the stack with a quenelle of Greek yoghurt and drizzle with the warm pineapple juice and maple syrup sauce.
