Pineapple Fizzer Recipe

Ingredients
- 250gm Fresh Tropical Pineapple
- 3 Sprigs fresh picked mint
- 120g Ice
- 200ml Lemonade
- 50g Vanilla Ice Cream
- 1 Domestic or commercial blender
Method
- Pick the leaves off the mint sprigs, throw the stems and place the leaves in the blender.
- Cut and prepare the tropical pineapple leaving only the golden ripe flesh.
- Place the cut pineapple, ice, lemonade and vanilla ice cream in the blender with the mint.
- Blend until smooth.
- Pour into a tall chilled glass.
- Consume
Notes
Vanilla ice cream can be substituted for low fat and/or natural yogurt or left out completely for lactose intolerant consumers. If leaving out Ice Cream and/or yogurt substitute, add twice the ice amount. This item features on the menu at Star Gardentown Cafe, Toowoomba, Queensland
