Pineapple Clafouti Recipe

VEGAN version - no dairy, no eggs

Ingredients

  • 2 cups fresh pineapple, diced
  • 1/2 cup sugar
  • 6 tablespoons nuttelex , room temperature
  • 2 tbsp flax seed oil
  • 2 teaspoons of NO EGG
  • 1 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons baking soda
  • Pinch kosher salt

Method

In a medium bowl, sprinkle the pineapple with half of the sugar, and set aside.

In another medium bowl, beat together the nuttelex, remaining sugar, no egg and flax seed oil. In a third medium bowl, combine the flour, cinnamon, cloves, ginger, nutmeg, baking soda, and salt. Add the wet ingredients to the dry, and fold in 2/3 of the pineapple. Spoon the mixture into a small greased (with nuttelex) baking dish, or 4 ramekins, and scatter the rest of the pineapple onto the top. Bake for 16 to 22 minutes, or until a toothpick comes out cleanly.
