1. Ham & pineapple pizza
Ingredients
- 1 pizza base
- olive oil
- tomato paste
- 1 cup cheese, grated
- 80g ham slices, cut into 2cm strips
- 60g pineapple, peeled & cut into very thin slices and then 2cm size pieces
Directions
- preheat oven to very hot (240’c)
- using a pastry brush, brush 1tsp of olive oil over the pizza base
- spoon 2 tablespoons of tomato paste on base and spread evenly
- sprinkle ½ cup of grated cheese over base
- top with ham and pineapple pieces
- sprinkle remaining cheese over pizza
- bake for 20 minutes

2. School lunch box: Frozen Pineapple Pieces
- Peel and cut pineapple into bite-size pieces.
- Freeze for a refreshingly school lunchbox snack or cool fruit ice block at home
For a variation, roll in toasted coconut before freezing.

3. Pineapple ice-blocks
Ingredients (Serves 8)
- 3 cups fresh pineapple chunks (one medium size pineapple)
- 1/3 cup milk
- 1/4 cup sugar
Directions
- In a food processor, combine pineapple chunks, milk, and sugar; pulse until almost smooth, with some chunks of pineapple remaining.
- Pour half the mixture into a bowl or glass measuring cup for easy pouring. Pulse remaining mixture until completely smooth; add to mixture in bowl.
- Divide evenly among eight ice-block moulds or paper cups, and insert wooden sticks. Freeze until solid (at least 4 hours).
